These pancakes are a quick way to use up some zucchini that is abundant this time of year.  I heard lots of complements from tasters at the market and there were some shocked mothers and fathers who were surprised that their kids liked something that had zucchini it.   I topped the pancakes with maple syrup from Flying Mouse Farms, probably the best maple syrup I have ever tasted.

Ingredients
  1. 2 cups summer squash or zucchini, grated
  2. 1/3 Cup All Purpose Flour
  3. 2 Tablespoons Sugar
  4. 1/2 teaspoon Cinnamon
  5. Baking Powder 1 teaspoon
  6. Salt 1/2 teaspoon
  7. 2 Eggs
  8. 1 Tablespoon Butter, melted plus extra for cooking
  9. 1 1/2 teaspoons Vanilla Extract
For Serving
  1. Flying Mouse Farms Maple Syrup
  2. Powdered Sugar
Instructions
  1. Grate the zucchini on a box grater and squeeze out the excess liquid with your hands.
  2. In a large bowl combine zucchini with the flour, sugar, cinnamon, backing power and flour.
  3. In a separate bowl wish the eggs, melted butter and vanilla extract together.
  4. Mix the wet ingredients into the zucchini mixture until just combined. Be careful not to over mix.
  5. Preheat a skillet over medium heat. Add enough butter to coat the bottom of the pan, about 1 tablespoon. When the butter melts scoop 1/4 cup servings of the mixture into the pan, don't overcrowd. (Unless you have a very large skillet you will probably need to cook them in two batches.) Cook until golden brown on one side, about 2 minutes, and flip cooking approximately 2 more minutes.
